This cake is sweetened only with fruit, packed with protein, and made with easy natural ingredients.
Best of all, we promise you it’s delicious!
• 1.5 cups packed pitted dates
• 3 eggs
• 1/2 tsp baking soda
• 1/2 cup water
• 2 tbls coconut oil
• 2 tsp vanillia
• 1.5 cuts packed almond meal
• 1/2 cup cocoa powder
• Walnuts or pecan (optional)
Preheat oven to 325.
To make a date paste, place all the ingredients except the almond meal, cocoa powder, and walnuts in a food processor or strong blender.
Blend until it forms a smooth liquid paste. if it is too thick add some more water.
Mix coco powder and almond meal together in a bowl.
Pour in the date paste and stir until smooth. If adding walnuts you can mix them in or sprinkle them on top.
Grease an 8” round cake pan with coconut oil, and pour in batter.
Bake for 25-30 minutes. Do not over cook. Ideally the tooth pick should not come out completely clean.
Let cool before serving. serve plain or with fresh fruit and/or whipped cream.
May also be served chilled from the fridge.
